Garlic-Cheese Broiled Shrimp....Serves 2




Ingredients

1 pound of raw jumbo shrimp
2 teaspoons of olive oil (cold pressed)
1/2 cup of lemon juice
3 cloves of finely minced garlic
1 whole stick of melted unsalted butter
1/4 cup of chopped scallions
1/4 cup of chopped chives
1 tablespoon of Kosher salt
1 1/2 teaspoons of black pepper
1/2 cup of Cabot's Seriously Sharp Cheddar Cheese (shredded)*


How to make this recipe

1) Set oven broiler to High

2) Using a rimmed baking pan, place two sheets of heavy duty foil on the surface, then spray with a non-stick coating (like PAM)

3) Rinse, clean & devein shrimp, leaving tails on

4) In a large bowl, combine cleaned shrimp, olive oil, lemon juice, garlic, chives, scallions, melted butter, salt & pepper. Mix well to completely coat shrimp.

5) Arrange shrimp mixture on pan in a single layer and place under broiler for approximately 5-7 minutes

6) Take pan from under broiler, sprinkle the shrimp with cheese and return to oven for about 1 minutes or until cheese has melted.

7) Pour accumulated pan drippings into a small bowl and keep warm.

ServingSUGGESTIONS:
Serve atop hot cooked rice or angel hair pasta. Use warmed pan drippings as a delightfully flavored "sauce" to pour over completed dish!!!

**You can use other cheeses and seasonings to change this dish. For an Italian "touch", delete the scallions and chives...add in 1/2 cup of freshly chopped oregano. Use 1/4 cup each of shredded Mozzarella & Parmesan cheeses as a substitute for the Cheddar.
