Chicken Broccoli- Mac and Cheese with Bacon




The ingredients:
6 oz uncooked macaroni elbow or any kind pasta
3 cup fresh pre-chopped broccoli florets
3 slice bacon coarsley chopped
12 oz skinless chicken breasts, cut into 1/2 inch thick
1 tsp salt
1 tbsp garlic powder or minced garlic u can use too
1 tsp 1/8 season all spice
1 1/4 cup milk
1 cup chicken broth
1/4 cup all purpose flour
5 oz cheddar shredded cheese

DIRECTIONS

Start by cooking your pasta al dente. Last two minutes of pasta being done add broccoli to same pan so it can boil. Just two minutes is fine.

Drain pasta mixture. Set aside.

Cook in another pan bacon. 4 to 6 minutes till crisp. Remove bacon with a slotted spoon and put bacon aside.

In same skillet u cooked bacon (use same bacon grease) your going to cook your chicken. But first, season your chicken with garlic and season all. Then throw chicken in pan with bacon grease.

Cook chicken for about 6 to 8 minutes.

Combine remaining 3/4 teaspoon salt, milk, stock, and flour, stirring with a whisk. Add milk mixture to pan; bring to a boil, stirring frequently. Cook 2 minutes or until thickened. Add pasta mixture and 2 ounces cheese; toss to coat. Sprinkle with remaining 3 ounces cheese and bacon. Broil 2 minutes or until cheese melts.

Pecan Pie Bread Pudding without the crust!




The ingredients:
1 (16 oz) loaf day old French bread
2 and ½ cup milk
1 cup half & half
4 eggs, lightly beaten
1 cup granulated sugar
1 Tablespoon vanilla
⅛ teaspoon salt
½ cup butter, softened
1 and ½ cup packed brown sugar
1 cup pecan, chopped


DIRECTIONS/
Preheat oven to 350*.
Cube bread the place in a large bowl.
In another bowl, beat eggs, milk, half & half, sugar, salt, and vanilla to eggs; whisk. Pour over bread. Allow to sit 10 to 15 minutes
In another small bowl, combine with a fork, softened butter, brown sugar, and pecans. Mixture will have the consistency of wet sand.
Pour half of the bread mixture into a 8x8 inch pan.
Top with half the pecan mixture.
Spoon remaining bread mixture over and top with remaining pecan mixture. Press down into pan slightly. Pan will be really full.
Top with remaining pecan mixture.
Place pan on a cookie sheet with a edge to catch mixture that may boil over. Bake at 350* 45 to 55 minutes. Center will be slightly wiggly, but will set when cool. This recipe easily doubles for a 9x13 pan.

Pumpkin Pie Cupcakes!




Ingredients
1 15 oz can pumpkin puree
½ cup sugar
¼ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
¾ cup evaporated milk
⅔ cup all purpose flour
2 teaspoons pumpkin pie spice
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda

Directions
Preheat oven to 350 degrees. Line 12 cup muffin tin with silicone liners, foil liners sprayed with cooking spray or just spray the cups with cooking spray. Either of these three methods will make it easy to take the cupcake out after it’s cooked. Paper liners make it difficult to remove the cupcakes.
Mix the pumpkin, sugar, brown sugar, eggs, vanilla extract and milk. Add the flour, pumpkin spice, salt, baking powder and baking soda to the mixture. Fill each muffin cup with 1/3 cup of the mixture. Bake for twenty minutes and let cool for twenty minutes. Remove cupcakes from pan and chill in the fridge for 30 minutes. Top with whipped cream and sprinkle more pumpkin pie spice on top and serve. Makes 12 cupcakes.

White Chicken Enchiladas






10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies

Directions



Preheat oven to 350 degrees. Grease a 9x13 pan
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth.
Heat over medium heat until thick and bubbly.
Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
Pour over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese

Crockpot Stuffed Peppers






Very delicious!! I cooked for 6.5 hours on low and the peppers turned out very tender! Cook rice first before mixing into meat mixture. Then stuff the peppers. So good I'm making again soon!
Ingredients serves 4
4 green bell peppers
1 lb ground beef
1/2 cup cheddar cheese
32 oz spaghetti sauce
2 cup Cooked rice
1 pepper (to taste)
1 salt (to taste)
1/4 cup onion

Directions



Cut the tops off of the green peppers. Clean out seeds and white membrane. I used a melon baller for this.

In a separate bowl, mix together meat, rice, onion, salt, pepper, and cheese (use your own desired amount of cheese).

Stuff peppers with meat mixture.

Place in crockpot. Cover with spaghetti sauce.
Cook on low for 6-7 hours. If desired, add more cheese on top of peppers near end of cooking

Ingredients:
1 (16 ounce) box rigatoni pasta
8 ounces sharp cheddar cheese, shredded
8 ounces monterey jack cheese, shredded
4 ounces parmesan cheese, grated
2 cups heavy cream
salt and pepper

Directions:

Preheat oven to 350°F.

Prepare rigatoni noodles according to package directions, but add a good bit of salt to the water. Once cooked, drain but do not rinse the pasta.

Transfer pasta to a large mixing bowl. Add half the cheddar, monterey jack and parmesan cheeses, as well as the heavy cream. Stir well to combine, season with pepper to taste.

Transfer the mixture to a 9"x13" casserole dish. Sprinkle the remaining cheeses on top and bake for 30 minutes until golden brown and bubbly.
